Prevent cross-contamination in a busy kitchen

Follow the journey from raw ingredients to ready-to-eat food. Find the overlooked hand, equipment and storage routes that can spread contamination, then build practical separation into your daily routine.

Start with the food journey

Look at where raw meat, fish and poultry arrive, are stored and are prepared. Follow the same route for salads, sandwiches and other foods served without another cooking step. Wherever those routes meet, decide how you will keep contamination from reaching ready-to-eat food.

Make separation practical

Use separate preparation areas, boards and utensils for raw and ready-to-eat tasks wherever possible. Cleaning materials can carry contamination too. For shared areas or equipment, follow an effective cleaning and disinfection procedure between uses. Complex equipment needs particular care: a quick surface wipe may miss internal parts.

  • Keep raw ingredients covered and away from ready-to-eat food.
  • Wash hands with soap and warm water between tasks.
  • Clean and disinfect after contact with raw food.

Check the ordinary touch points

Run a short team exercise: after handling raw ingredients, identify every handle, tap, phone and control someone might touch. Use the results to improve your workflow and cleaning schedule. A colour-coded board is only helpful when staff understand the system and use it consistently.

If separation breaks down

Stop the task and isolate affected food. Tell the person responsible for food safety, assess whether food must be discarded and restore the safe procedure before restarting. Record the cause and the change needed to prevent a repeat.
